Kind of impossible to diagnose or recommend anything without seeing the hands, the wheel, and how everything is reacting together. It could be any number of things causing the understeer.

Out of curiosity - what tires are you running and how old? I’ve found the MG Red to be very reactive to chassis tuning for the first 4-6 heat cycles but they get very numb after that even if there is a lot of rubber left.
That said… a bar change should be pretty trackable, particularly going to those extremes.
