You might have spoken to them already but, Hegar engineering comes to mind as one of the folks that ran KZ engine in open format with larger carbs. Zen Cart!, The Art of E-commerce

I’m not sure about 250cc singles, but 250 twins also run 2x 39mm carbs as far as I know. So you could try people in those circles too

my K9B came with one. tried on the R1 manifold but it leaked. I sent a text to my engine builder. One of his guys road races and I think he runs a 39mm on his R1. Thanks for you help. Low lap times!!
